We have set up inside the LVCC more times than we can count, and we plan around the parts that trip people up: drayage and the marshalling yard, union labor rules, fire marshal signoff on equipment, and the burst of traffic that hits every booth the minute a keynote lets out. Guests order on a tablet, keep walking the floor, and come back when their piece is ready.
